OBS Pumpkin Pie
Ingredients:
- You will need enough short-crust pastry to cover at least a 20 cm pie-dish
- 450 g of fresh pumpkin
- 250g granulated sugar
- 2 eggs
- 60 ml milk (may need more or less it depends on how "wet" the pumpkin is)
- 10 ml ground cinnamon
- 10 ml ground ginger
- 10 ml ground nutmeg (You can vary the spice ratio, I prefer more nutmeg)
Method:
- Prepare the pastry in advance and allow it to rest in the fridge before rolling out
- Chop the pumpkin flesh into cubes and steam for 20 minutes
- Puree the steamed pumpkin pieces
- In a large mixing bowl whisk the pumpkin puree, sugar, eggs and spices
- Finally add the milk last, you want a runny mixture so you need to adjust the level of milk until it feels right
- Pour the mixture into a pastry lined pie dish and put into a hot oven (220°C) for 15 minutes, then turn the oven down to around 180°C for a further 20-30 minutes
